"SBRISOLONA CAKE"

For 6 peoples::
250 gr. white flour, 200 gr very fine corn meal, 250 gr. of peeled and chopped sweet almond, 200 gr. of butter, 200 gr. od sugar, a bag ofvanilla, peel of an half of lemon, two egg-yolk, a glass of rum, a bag of icing-sugar, a dash of salt.

A tin: grease it with a knob of butter and two spoons of breadcrumbs in order to powder it.

* In a saucepan with fresh water, put the almonds: boil and drain, peel and chopped them.

* Sieve the white flour and the corn meal together with the vanilla, later put it well on the pastry board merge with the sugar, grated lemon's peel, peel of an half of lemon, the chopped almonds, a dash od salt and knead everything.

* Grease the cake-tin and powder it with the breadcrumbs. Crumble the mixture and put it into the cake tin.

* Cook in a 180°C oven. When it is ready powerd it with sprinkle it with icing-sugar.

The Torta Sbrisolona is the typical sweet of Mantua and can be preserved very long if enveloped with silver foil.
